More than a finished pie

The UNESCO record describes a culinary practice built around preparing dough and baking it in a wood-fired oven, including turning the pizza during baking. It locates this practice in Naples, in the Campania region.

The record is about the knowledge and practice of pizzaiuoli. It should not be read as a claim that every pizza is made the same way.

A name with a written specification

Separately, the EU registered Pizza Napoletana as a Traditional Speciality Guaranteed in 2010. The registered description covers a round pizza with a raised rim, a central topping, and a soft, foldable texture, and it sets out the dough, approved toppings and oven method in detail.

Two different recognitions sit side by side: one protects a craft and its community; the other defines a product. Neither turns every round pizza into the registered article.

How it is commonly eaten

In Naples the pizza arrives soft enough to fold, from ovens that cook it in little more than a minute. The UNESCO record treats the counter, the oven and the crowd around them as part of the practice, and describes the craft being learned in workshops and family homes.

A style word on a menu describes an approach, not a certified origin. The registered description exists so that the name keeps a defined meaning.
